Taleggio - A Mark of Tradition

May 8, 2018

Taleggio is a cheese with ancient origins, perhaps as early as the 10th century. It originates from an area called Val Taleggio in Bergamo province of Italy, from which derives the name of the cheese. Val Taleggio is situated on the right bank of the river Brembo. The valley inhabitants needed to store the milk in excess of the direct consumption and began to produce the cheese, originally seasoned in "caves" or huts in the valley, that could then be exchanged for other products.

Fast forward to today and Taleggio is very much still around and more popular than ever.  Taleggio is a cheese whose characteristics are protected by the European Union and recognised with Designation of Origin (DO) and with Protected Designation of Origin (DOP). This means that Taleggio can only be produced and matured exclusively in Lombardy, in the provinces of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Pavia, in the province of Novara in Piedmont, and in province of Treviso of Veneto.
